“Feijoada à transmontana” Recipe


A typical dish of Portuguese cuisine.


  • 500 g of red beans (dry)
  • 350g of spareribs
  • 1 chispe (pig’s foot)
  • 100 g of fresh streaky bacon
  • 1 meat chorizo
  • 1 Moorish chorizo
  • 2 onions
  • 1 clove of garlic
  • 1 bay leaf
  • 3 tablespoons of oil
  • 5 dl of white wine
  • 1/2 can of peeled tomatoes
  • 2 carrots
  • 1 portuguese cabbage
  • Salt and pepper.


  1. To prepare this recipe, soak the beans in water overnight. On the day, cook it in water seasoned with salt. Separately, cook the spareribs, chispe, bacon and chorizos in a pan filled with water and one of the peeled and chopped onions. Keep removing the meats as they are being cooked.
  2. Peel the remaining onion and garlic, chop them, pour them into a pan, add the bay leaf and the oil, bring to the heat, and let it cook until the onion is soft. Add the white wine, chopped tomatoes, peeled, and sliced carrots, chorizos, and the cabbage in pieces. Let it cook for 5 minutes.
  3. Then add the beans with a little of the cooking broth and all the meat cut into pieces, adjust the salt, season with pepper, cover and cook until pure. Then serve immediately.
